Vineyard of the Stec family

The vineyard is located on the south-eastern outskirts of Tuchów. The vines are planted on the southern and south-western slopes, 220 to 320 meters high. From the north, the vineyard is surrounded by a large, several hundred hectare forest complex – Tuchowskie Forests – protecting the vines from cold winds and frost. There is no industry or large farms nearby, thanks to which there is peace, quiet and clean air, an ideal climate for a vineyard and enotourism. The vineyard is ecologically certified, cultivation is carried out on the basis of permaculture. Apart from the grapevine, there are no other plantings, no seedlings of other plants. No pesticides, herbicides or randomizing are used. Historically, small farms applying natural fertilization were located here, so the land is healthy and alive. Sub-mountain soil: sand rock, marls and clay. The vineyard runs a grapevine nursery, with seedlings for its own needs and for sale.

Our wines

Hibian

Dry white blend: Hibernal, Bianca (60:40).
Fermentation takes place in steel vats at temperatures up to 18 degrees. It is long and slow, up to several weeks. The wine matures for a minimum of a year in steel vats.
Alcohol 11%. No residual sugar, acidity 6-7 g.
Bright color, almost transparent with a delicate hint of platinum.
A real aromatic bomb, the wine is definitely smelling! There are floral aromas, especially violets, in an attractive combination with ripe citrus and exotic fruit. Here we find both orange and passion fruit and mango.
In the mouth, it is light, pleasant, with low acidity, with a perceptible, delicate sweetness coming only from the aromas.
It is suitable for independent drinking, as an aperitif and for delicate, fresh, unripened goat cheeses.

Hibis

Dry white blend: Aurora, Seyval Blanc, Johanniter, Solaris (40:30:20:10)
The complete opposite of Hibian. This wine is fermented and aged in oak barrels. In full sediment, it lies for 3 to 6 months, during which time it is mixed. Then it is aged for a minimum of a year in a French oak barrel, used and fully renovated by a cooper, including re-firing.
Alcohol 11%. No residual sugar, acidity 6 g.
Intense straw color, catching golden reflections from oak.
Strongly complex aromas. There are exotic fruits here, but also cardamom, cinnamon and vanilla.
In the mouth, buttery, smooth, round, full, oily, dense, extractive, with relatively low acidity, with soft, perceptible tannins.
The wine works well with more intense cheeses, baked fish, light dishes in butter and cream sauces. It does not tend to dominate the dish by smell, but it nicely complements and emphasizes the taste of the dish.

Sibian

White, dry blend: Seyval Blanc, Muscat Odeski, Muscaris, Jutrzenka (60: 30: 5: 5).
Fermentation takes place in steel vats at temperatures up to 18 degrees. It is long and slow, up to several weeks. The wine matures for a minimum of a year in steel vats.
Alcohol 11%. No residual sugar, acidity 7.2 g.
Bright, transparent color with a hint of yellow.
Typical nutmeg aromas, not aggressive, very subtle. Mostly orange, honey, musk and lily of the valley.
In the mouth it is light and acidic.
Perfect for fish, seafood, salads, delicate dishes with increased acidity, it refreshes the mouth very nicely.

Rose

Pink dry blend: Swenson Red, Bolero, Regent, Marechal Foch (70: 10: 10: 10).
Fermentation, practically without maceration, takes place in steel tanks and takes about half a year. It is a typical summer wine, introduced at the earliest, in May and June.
Alcohol 11%. No residual sugar (although in the mouth it feels like sugar!), Acidity 5 g.
Light pink color.
Very strong and expressive aromas, characteristic of Swenson Red, i.e. wild strawberry, strawberry and even notes of lollipops.
In the mouth you can feel very delicate tannins and delicate acidity. Light wine, not too complex.
For independent drinking, as an aperitif, it is perfect for fruit desserts. It can dominate everything with its strong aromas, so the glass must be rinsed thoroughly after tasting!

Leron

Dry red blend: Leon Millot, Rondo (60:40).
Heat fermentation takes place at temperatures up to 30 degrees, it takes 10-12 days. After decanting, 60 percent of the juice is fermented in steel and 40 percent in barrels. The combined wines are first put in barrels, then in steel tanks, where they are aged for a minimum of one year.
Alcohol 13%. No residual sugar, acidity 5 g.
The very dark, almost black color is the result of long maceration and the properties of the strains.
Strong aromas of forest fruits, especially blackberries, are also well felt cherries and black currants. Vanilla appears from the barrel.
Pleasant mouth with low acidity, mild tannins and dark forest fruits.
Good for independent drinking and for mild dishes not loaded with spices: oven-baked duck breast, pasta with tomato sauce, stuffed peppers, pork tenderloin.

Roch

Dry red blend: Regent, Marechal Foch, Rondo, Leon Millot (55: 40: 3: 2).
No residual sugar, acidity 6 g.
Very dark color.
In the nose, mainly blackberry and blueberry, there are also smoky, smoked aromas as well as vanilla, jalapeno and cherry.
In the mouth, a distinct spine made of strong tannins and higher acidity. The wine has potential, it can mature for up to 5 years, then it reaches fullness, but it is also suitable for drinking when it is young.
Due to its strong structure, wine can be paired with serious dishes, especially baked, fried, grilled meats, and thick stews.

Antonio

Dry Red Blend: Bolero, Cabernet Cortis, Pinot Noir (70:20:10)
Very short maceration for 3-4 days. Heat fermentation takes place at temperatures up to 25 degrees. Finally, the wine goes to a used barrel, where it is aged for a year.
Alcohol 12%. No residual sugar, acidity 6 g.
Light red color, which is the result of a short maceration.
Pinot Noir style wine with typical aromas of fresh, unprocessed fruit, mainly raspberries and strawberries, and a hint of violet, planed pencil and a bit of vanilla.
In the mouth, the wine is light, with discreet tannins, noticeable acidity, abundant fruitiness.
Perfect for delicate dishes, not too aromatic, e.g. vegetable pates, cream soups.
